To prepare the salad of prickly pears, start with the youngest ones. They must be peeled with a normal potato peeler, then washed and deprived of the thorns. At this point, all that remains is to cut them into cubes and transfer them to a very large pot full of water. Then add salt and cook for 30 minutes (starting from the first boil). At this point, drain the shovels and rinse them thoroughly under water to remove the jelly that will have formed. Now take care of the other ingredients. Cut the tomatoes into wedges and reduce the onion into thin slices. Then reduce the feta cheese into cubes and get the juice from the lemons.
