To prepare the salad of prickly pears, start with the youngest ones. They must be peeled with a normal potato peeler, then washed and deprived of the thorns. At this point, all that remains is to cut them into cubes and transfer them to a very large pot full of water. Then add salt and cook for 30 minutes (starting from the first boil). At this point, drain the shovels and rinse them thoroughly under water to remove the jelly that will have formed. Now take care of the other ingredients. Cut the tomatoes into wedges and reduce the onion into thin slices. Then reduce the feta cheese into cubes and get the juice from the lemons. Combine all ingredients (corn included) in a very large salad bowl. Finally, season with oil, salt, pepper and decorate with a few mint leaves.

3 shovels of prickly pears
3 cherry tomatoes
80 g.of pre-cooked corn kernelsa
few mint leaves
2 lemons

80 g.of feta allowed
1 onion4 tablespoons of extra virgin olive oil
a pinch of salt and pepper.

Preparation of Fried Prickly Pears Blade

To prepare the salad of prickly pears,
put on a pair of gloves and rinse the blades under running water. With the potato peeler, remove the thorns and rinse them, pat them dry with paper towels.
Beat the eggs and season with a pinch of salt and the chopped parsley. Prepare the breadcrumbs seasoned with the grated lemon peel, pepper and salt. Dip the paddles in the beaten eggs, flour them and dip them in the breadcrumbs. In the meantime, heat the oil for frying and as soon as it reaches the temperature, start frying the prickly pear blades. Let them brown on both sides, then place them on absorbent paper. The prickly pear blades are ready to be tasted and perhaps accompanied by a second course of meat or fish.
